 Mango Sticky Rice

Ingredients:

  • 200g of glutinous rice
  • 1 ripe mango
  • 200ml of coconut milk
  • 50g of sugar
  • a pinch of salt
  • Sesame seeds for garnish (optional)

Kitchen Tools Needed:

  • Saucepan
  • Steamer
  • Serving dishes

Instructions:

  • Rinse the glutinous rice under cold water until the water runs clear.
  • Soak the rice in water for at least 2 hours, or overnight for best results.
  • Drain the soaked rice and place it in a steamer lined with muslin or a clean cloth.
  • Steam the rice for about 10-15 minutes, or until the rice is tender and glossy.
  • In a saucepan, combine the coconut milk, sugar, and pinch of salt. Heat gently until the sugar has dissolved, do not boil.
  • Once the rice is cooked, transfer it to a bowl and pour about 2/3 of the coconut milk mixture over it. Let it sit for 10 minutes to absorb the flavor.
  • Peel and slice the ripe mango into thin strips.
  • To serve, place some sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut milk mixture. Garnish with sesame seeds if desired.
