 Sri Lankan Kottu Roti

Ingredients:

  • 200g of pre-cooked roti (or tortilla)
  • 100g of diced chicken breast
  • 50g of shredded carrots
  • 50g of chopped cabbage
  • 2 eggs
  • 2 tablespoons of soy sauce
  • 1 teaspoon of curry powder
  • 1 tablespoon of vegetable oil
  • Salt to taste
  • Pepper to taste
  • Fresh coriander for garnish

Kitchen Tools Needed:

  • Wok
  • Knife
  • Cutting board
  • Spoon
  • Plate

Instructions:

  • Heat the vegetable oil in a wok over medium heat.
  • Add the diced chicken breast and cook until it's browned and cooked through.
  • Add the shredded carrots and chopped cabbage to the wok, stirring occasionally until they soften.
  • Push the mixture to one side of the wok and crack the eggs into the empty side, scrambling them.
  • Once the eggs are cooked, mix them with the chicken and vegetables.
  • Chop the pre-cooked roti (or tortilla) into small pieces and add them to the wok.
  • Pour the soy sauce and sprinkle curry powder over the mixture, stirring well until everything is combined and heated through.
  • Season with salt and pepper to taste.
  • Remove from heat and garnish with fresh coriander before serving.
