Sri Lankan Kottu Roti

Ingredients:
- 200g of pre-cooked roti (or tortilla)
- 100g of diced chicken breast
- 50g of shredded carrots
- 50g of chopped cabbage
- 2 eggs
- 2 tablespoons of soy sauce
- 1 teaspoon of curry powder
- 1 tablespoon of vegetable oil
- Salt to taste
- Pepper to taste
- Fresh coriander for garnish
Kitchen Tools Needed:
- Wok
- Knife
- Cutting board
- Spoon
- Plate
Instructions:
- Heat the vegetable oil in a wok over medium heat.
- Add the diced chicken breast and cook until it's browned and cooked through.
- Add the shredded carrots and chopped cabbage to the wok, stirring occasionally until they soften.
- Push the mixture to one side of the wok and crack the eggs into the empty side, scrambling them.
- Once the eggs are cooked, mix them with the chicken and vegetables.
- Chop the pre-cooked roti (or tortilla) into small pieces and add them to the wok.
- Pour the soy sauce and sprinkle curry powder over the mixture, stirring well until everything is combined and heated through.
- Season with salt and pepper to taste.
- Remove from heat and garnish with fresh coriander before serving.
